The head casting is hollow, and although there will be some spare on the bottom surface for machining purposes remember that a lot of it has been used already - set the machine head a hair too low and you will be through the surface into the coolant chamber - or you might just leave it very thin and find out when it blows through when you are running it...

My advice would be to take only enough off the head to get it absolutely flat, and to get any compression increase from taller pistons - particularly if you are leaving your engine 6 volt.
