DOT 3, 4, or 5?

I am now installing an all new brake system from VPW on my 50 PW. New lines, rubber hoses, wheel cylinders, rebuilt master cylinder, and brake light switch. Everything that is not a brass fitting. Since I am starting anew, should I use DOT 5 fluid? I believe it is not water soluble, and therefore should not collect moisture. Has anyone else done this? Thanks for any and all help.
