I live in florida and what I did here is poured the trench like you described,then I put down 4x4 box wire and still used the fiber added concrete. I did over kill and poured a 5" slab and in the center bay I made it 8" because I will be adding a lift, it only calls for a 4" slab but like I said I did overkill a little. The best feature I did was to put a door in the center bay rear, so you can drive thru or on those hot breezeless nights it does make it a little cooler.
