The things that will need changing include the bulbs, headlights, and ignition coil. Ammeter will be OK and so will the starter. I'm not sure about the gas guage, I've never converted a truck with a working original gas guage, however, I don't see any reason why it would care about voltage very much - it just measures the difference between the field strength in two coils. The ignition coil can be solved in one of two ways, you can use your 6v coil with a ceramic resistor, or you can buy a 12v coil with an internal resistor. Otherwise you will fry your points.
