W500 Front bench seat

I am looking for a nice bench seat to put in my W500 camper. I have 5 kids and we are thinking of heading to Arizona from Vermont and i need to have 1 more seat to legally seat them all with seatbelts. Also what are things to check/change before taking a 30 year old truck on a 5000 mile adventure. Thanks jeff
