whatever you do, I suggest getting a load equilizing hitch. This distributes load on all four truck wheels and makes for a much more stable unit.

Regarding engines, I tow with a 3/4 ton van and a 318 engine. The engine is fine, maybe you won't fly up hills but really the engines are not the limiting factor in towing. Brakes, wheelbase, truck weight, properly set up trailer with brakes, equilizing hitch, right tongue weight ...worry about that stuff first. The engine is the least of my concerns.
