Sounds like a great Idea. I bet others will want side board/signs for their other trucks also.
A quick way I have made those signs; Cut the board, router the edges so they look nice, roter out the words etc. Then spray the entire board the color you want the edges and letters to appear. When dry, run it through a surface planner and just make a few light cuts. This will remove the surface paint, leaving the color in all the routed areas, then seal with marine UV protected varnish.
