DOT three is glycol based and as such it will absorb moisture from the air. DOT 5 is silicone based and won't absorb moisture but it will settle into lower parts of lines. This can freeze inn really cold weather and lock your brakes. DOT 5 can also cause some brake light switches to start leaking if they are the pressure type. One further caveat is the two types do not mix. You must drain and flush the entire system. Preferably an alcohol flush.
