I'd go with a stroked Jeep 4.0L over a diesel. Lots of low end torque and decent horse power that will take the high RPM to get you out of the mud.
I'd use an NV5600 tranny mated to a NV 241HD transfer case.
'Course, now the axles need to be replaced...
