procedure can be found in most old repair manuals
suspend a good therometer in a pan of water,
suspend the thermostat (make sure it is completely covered) and heat the water
watch and see what the temperature is when the thermostat opens and closes - do on the kitchen stove
make sure it opens all the way
if it is operating correctly then your problem might be something else
set timing to factory specs
if you are concerned install an oil temp guage - will have to remove the pan to install
