Why go to a big block? A smallblock Chrysler engine (318-360) will produce enough torque to snap your axles any day (ask me!) and give you the ability to cruise at 60 and get 10 mpg or better. Plus, smallblocks are cheaper to buy and build, and weigh about 200 lbs less (that means easier steering).
